Garlic Infused EVOO with Arugula Microgreens!
Finally! We have arugula microgreens! After many trial and error the grow media that has produced the beautiful arugula microgreens for this recipe is…Coco Coir! We have tried clay pebbles, grow mats, lava rock and then one day Mr. Martian had this Coco Coir sitting in the window seal and asked me to give it a go! I’m so happy we gave it a go because it is not only working for the arugula microgreens but also the pea shoots and radish microgreens (however, the radish microgreens are not as healthy as we would like them to be but I believe this is due to the flood and drain system and them being a bit too wet). With the new microgreen production facility that Mr. Martian is going to build we will have overhead watering and believe this is going to help with this issue.
I am so excited on how far we have come with this system. To walk out into the whitehouse with beautiful healthy microgreens is such a good feeling. We have a long ways to go but how far we’ve come is a total God-thing. We’d be lying if said there wasn’t times we’ve wanted to give up on this grand adventure. However, quitting and leaving it behind would hurt worse than pushing through the pain and the stress to do what we believe God has put on our hearts to do.
Life isn’t always easy or what we’d expected it to be. But God’s plan is so much greater than we could ever imagined. God has blessed me with a husband that helps me to see the bigger picture. I easily get entangled with the here and now and it is sometimes hard for me to see the future. Or as Mr. Martian would say, “See the forest through the trees.” My hopes and dreams involve my passion for cooking and feeding God’s children. In order to get there I have come to realize we have to go through the "not so fun" times to get where we want to be.
In my Beth Moore Esther study guide she states, “Sometimes God wants to show us what we can do rather than let us find someone who can do it for us.” I have a tendency to want to take the easy road and God and my awesome husband are teaching me to be stronger than I ever imagined I could be! Beth Moore also stated in the same study, “He’s trying to make warrior out of us, Girlfriend! Rise to the occasion! But we aren’t meant to fight unseen forces alone. You and I have the God-given right to lock arms with our sister and brothers in Christ and defend ourselves with the sword of the Spirit and the shield of faith.” (Ephesians 6:16-17).
“No, in all things we are more than conquerors through Him who loved us!” (Romans 8:37)
I believe God is taking me through a new season of my life…to work hard to get where God wants me to be and have confident faith to believe He has great plan for me and for Mr. Martian and I together as man and wife. To not only grant our personal hopes and dreams but to work together to do great things for His kingdom! I am so very blessed to have a God and husband who want the very best for me and drive me to pursue my dreams and passions.
“Forget the former things; do not dwell on the past. See, I am doing a new thing! Now it springs up; do you not perceive it? I am making a way in the desert and streams in the wasteland” (Isaiah 43:18).

Garlic-Herb Infused EVOO with Arugula Microgreens
• ¾ cup EVOO
• 3 cloves garlic, crushed
• 2 tablespoons chopped fresh parsley
• 2 tablespoons chopped fresh chives
• 1 heaping teaspoons chopped fresh rosemary
• 1 heaping teaspoon chopped fresh thyme leaves
• 2 heaping tablespoons arugula microgreens
• S & P to taste
Simmer ¾ cup EVOO with the crushed garlic in a small saucepan for 5 min, being careful not to burn the garlic. After 5 min remove from heat and discard garlic (or use it in another recipe like sautéed kale with EVOO and the sauteed garlic, chopped).
Add all of the herbs and microgreens into a small bowl. Pour over garlic-infused EVOO. Add salt and pepper to taste and gently whisk. Serve over filet mignon, roasted potatoes, chicken or whatever culinary creation you can dream up! Refrigerate leftovers and pour over your fried egg in the morning:).
